  Water Spinach salad with prawns, fried shallots and garlic
(Serving Salad with Dressing sauce)
 

1. Ingredients
• 280g cleaned stems of water spinach
• 200g onion cut in julienne
• 120g carrot cut in fancy julienne
• 20 pieces of shrimps, cooked, peeled and deveined
• 30 leaves of Vietnamese basil cut in small pieces (not in finely chopped)
• 20g of fried sliced garlic
• 40g of fried shallots
• 40g of roasted peanuts

 
2. Direction
• Use a splitter knife to cut the water spinach and keep it as one goes along on an iced water to keep it very crunchy and curled
• Drain the water spinach, then combine all salad ingredients prepared as above and mix well
• Add the salad dressing and toss gently
• Arrange the salad on a serving plate. Sprinkle with the crushed peanuts, fried shallots, garlic and serve immediately

Making dressing sauce
Ingredients
• 4 tbsp of kumquat juice
• 4 tbsp of sugar
• 4 tsp of fish sauce
• 2 tsp of minced garlic
• 4 tsp of minced red long chili
• A pinch of salt
  Direction
• In a bowl add kumquat juice, sugar and fish sauce. Whisk until the sugar is completely dissolved
• Then add about 2 tsp of garlic and 3 to 4 tsp of chopped chili. Taste it first, and adjust with salt, chili as your convenience. (If the taste is too strong add 1 tbsp of water)
